Losing weight by eating more?

A long time ago I starved myself in hopes of getting skinny (doesn’t work). It took me a while but I got out of the mindset and understand that wasn’t healthy, stopped tracking food, etc. For years I thought I was cured, I struggled in the past but I’m over it now. Over those years I’ve gained about 30 pounds by hardly changing diet or exercise (except for not starving myself).
Recently I decided to start dieting (in a healthy way) to lose some excess weight. After tracking my calories I realized that what I eat everyday is not even close to enough calories like 5/7 days a week. I’ve heard that not eating enough for extended periods of time can slow your metabolism so eating more will speed it up. Meaning that if I eat more I’ll actually lose weight. (Obviously exercising more as well) Anyway all that to say, is this accurate and if so how do I make sure I get enough food? Everyday I try to eat enough calories (like 1,700 for my size) I struggle to get enough food without eating unhealthily. I’m also a picky eater which doesn’t help lol.
