Any way to make food tracking suck less?

So yes, I'm one of those who will be/is trying to climb back on the weight loss bandwagon. In the past I've has good success with tracking my food.

The problem was, I hated it, so didn't stick with it long term.

Are there any tricks or hacks to make it suck less? (It also didn't escape my notice that the healthier I ate, the harder it was to track. Home made stir fry? No idea how much of each veg I had on my plate unless I input the entire recipe into an app and and figured out my portion of that. Cheeseburger from McD's? In the app.)
