Advice for a keeping a strict diet

I promised myself I would lose the weight. For about a month and a half, I pushed through a strict diet — chicken breast, lean beef, and broccoli every day. But eventually I burned out. I got so sick of the same food that I slipped back into old habits… more rice, noodles, pork. And once I started, the cravings hit hard.

Eating rice again felt so good. Then came the pork, then sweet ice cream, and now I can’t stop snacking. It’s like the cravings are controlling me. I don’t know how to break the cycle — any tips? What should I do?

Not to mention there are some days where I'd go to the gym and feel so good and motivated. But there's gonna be some weeks where i wouldn't go to the gym for 3 weeks like i don't want to at all. I'm so sick of this cycle no wonder I can't see progress at all.
