will not hitting my protein goal make me skinny fat

i started to watch how i eat and workout back in june, but i’ve literally gained weight instead. yes, its probably the muscles, but im also really struggling with my eating habits. ive been focusing on my protein so much and its honestly exhausting. i hate eating 3 meals a day, i hate making food, i hate spending money on food, and it feels like im doing something wrong bc i barely see a difference. i always end up overeating and it puts me in this awful cycle. i think paying so much attention to my eating is making things harder. would it be okay if i ate two high protein meals and skipped a breakfast? by high protein i mean around 40grams each meal, so i’d be in the 70-85g range of protein per day. im worried about looking “skinny fat” as a consequence.

my two meals will add up to a caloric intake of probably 1000, and i always have scraps (like a banana, icecream bar, a handful of nuts, a few chips, etc) so ill prob be around 1400-1500 cals, maybe less on some days.

im also 125 lbs 5’5 currently. i used to weigh 119 lbs before all this… sigh. goal is trying to lose 10 lbs by nov 20th (1 lb a week). i exercise regularly too (strength train/cardio). if any of that matters lol
