Breakfast and lunch meal prep ideas?

A month and a half ago, I began my weight loss journey after experiencing a severe stomach infection. During this time, I discovered that I also had high cholesterol and high blood pressure. When I started, my weight was 246 pounds, and I am currently down to 223 pounds.

Due to the infection, I haven’t had much of an appetite and am restricted from eating anything super fatty. In the past two weeks, I've started to feel slightly better and have begun eating more, typically consuming around 1,900 to 2,100 calories a day. However, I am struggling to find foods that fit my dietary restrictions.

My goal is to increase my daily intake to at least 2,500 calories. I'm looking for simple meal prep ideas for breakfast and lunch, as those are the meals I find most challenging.
