Meal Prep Issues

I meal prep on Sundays. I tend not to eat breakfast, but I have 3 different varieties for lunch and dinner as well as an assortment of smoothies I can drink.

I spend hours meal prepping and a pretty penny in the ingredients considering I am currently not working. After day two I can't stomach the food. It could be something I actually enjoy and found to be delicious but the fact that it had been sitting in the fridge for three whole days before I even get to it is really off-putting. I have to force myself to eat it and it leaves me feeling gross and unsatisfied. I have done this a number of times and unless is fresh food I can't commit to it. Then I waste weeks worth of food, as well as money and time.

I am currently in training for a new job that I will start in August. I am still a student so I will be gone from 7 to 7 four days out of the week. I'm also an absolute terrible cook. I have tried for years with the most simple of things. it comes down to the fact that I am terrible when it comes to seasoning. My boyfriend is a great cook but we don't live together.

How can I eat healthy if meal prepping is not something that is sustainable for me?
