How sustainable is it to have 1 actual meal in a day?

Im a graduating student in a holiday right now and am in a much better mental state to lose weight without being affected much by losing one of my coping mechanisms which is comfort food.
usually id wake up at 9-11am and drink strong black coffee to substitute a meal or if i am too hungry, i eat a steamed bun or 2 (about 350 cal approx). there after id maybe cycle or do stuff and usually go to the gym for 2 hours or so doing push/pull/legs 3 times a week. then i have my dinner between 8-9 which i stuff with 2 seasoned chicken breasts and a whole head of broccoli and half a bowl of white rice. Liberally, id say it comes to about max 800 calories with maybe 3 teaspoons of olive/rice bran oil used.
So far ive gone from 98kg to 92kg in a week and a half. Ideally i want to reach 75 kg with my muscle mass.

mainly what im curious about is whether there are better options because this has been what has prevented me from making instant noodles at night during my usual failed dieting attempts.
