Unsure about a lot

Hey there! First post, I was once 250 lbs and dropped down to 195-200 lbs after that I wanted to lose more weight to try and hit 150 lbs so when I first started I would jump rope and ate a lot healthier but wasn’t really keeping track of how much I was eating and I lost some more weight! Around 20 lbs which put me at 175 lbs after a while my weight started to plateau even after increasing the time I would jump for so I decided to join a gym. The lowest I saw my weight on the scale was 169 lbs but then I got lazy on my diet and ate a bunch of junk, my weight then went back to 175 lbs after this I started to watch how much I consumed. After a long plateau I saw somewhere on YouTube you should eat back at maintenance for a couple weeks then cut calories again to promote weight loss. After I did this I gained 5 more lbs so maybe I wasn’t quite eating at maintenance now my weight is stuck at 180 lbs (Forgot to mention I wasn’t to consistent with the gym I’d go for 2 or 3 weeks then stop for about a week and it was a continuous cycle) I move around a lot cause of my job my weekly average of steps is 12k and I run 3.0 miles after my workout but my weight is stuck, for the past 6 weeks I’ve eaten around 2100 calories which should’ve been enough to promote weight according to my fitness pal but it only made me gain weight for what it seemed 2+lbs I was getting stronger in the gym and my mile times were improving yet my weight increased so now I cut my calories more to 1600 which I’ve been told is too low so I’m not sure what to do! Sorry I know this is a bunch but I felt like the whole story should be explained I don’t know what to do anymore and it causes a lot of frustration with my self
