Potential insulin resistance. Any advice?

I can cook for family but I cannot cook for myself if it is an overly involved process (prep, cook, etc)... I don't know why I can't take care of myself but that is a different topic.

I had an appointment with an endocrinologist today and have bloodwork pending. I was told that it appears my issue is insulin resistance as I have had gestational diabetes in the past and have been unable to lose more than 10lbs over the last 7-8 years.

Her advice to me was: - Intermittent Fasting (I typically skip breakfast but have not been strict about a food schedule) - Completely eliminate sodas - Start walking at least 10 mins a day

I want to do this right, but I do not have a healthy role model in my home. I need to make better eating choices, but I have to actually like the choices in order to stick with them.

What are some easy individual foods or meals I can prepare for either myself, or my family if needed?

Is there anything about insulin resistance I should know about?
