How to start losing it? (~355lbs, 19M)

Hello all, so I've been obese for as long as I can remember. Growing up I never really thought about what I was eating and or drinking unfortunately. I never learned about nutrition other than the food pyramid at school.

Recently in the past 6 months or so I've been discovering new interests I would have never thought I'd love two years ago. Such as taking long walks, hiking, camping, backpacking, biking, and even weight lifting, but I've come to realize that my weight really affects what I can do and what I can do comfortable. I also want to lose the weight for health reasons of course haha. The problem is that even with these new found activities I haven't really been paying attention on what I've been eating.

The only prior diet I've done was keto back in 2021 and I did it for 2 years and got down to 250lbs, but stopped when my mom passed away and I put it all back on over the course of last year. I really like the idea of simple / straight forward diets, such as keto with the low carb. What I need is something I can do even with limited resources such as when I'm in the backcountry or no grocery store is nearby.

Though I won't lie, I am not knowable in diets or nutrition so I'd love to hear some real advice. Thank you all in advance and I look forward to reading your replies! :)
