How do I get back on track?

I was doing so good. I'm a dude, 5'8. Starting weight was 231 in November, 2021. Lowest was 158 in May, 2023.

Now, I'm back up to the low-mid 170s.

I was reading this subreddit and r/CICO religiously throughout my journey. So I know to not let one day of going over phase me, just get back on track the next day. Unfortunately, I took that mindset too far. I don't let it bother me if I go over, but the "next day" never comes. I just eat too much every day instead.

I suppose I'm just confused. How is it possible that it was so easy to do for a year and a half, and now it seems impossible to do again? I did start eating more due to working a lot of overtime, and dealing with a stressful friendship. But now that the stressful times are over, I've gotten used to eating that amount of food. I'm struggling to eat at maintenance, let alone a deficit. Just in the past month, I've stopped tracking calories because it's been so many months of going over maintenance every day. And that's after a 700+ day streak on MyFitnessPal...

I'd really appreciate if anyone can share their experiences with this. Thank you!
