Am i being too hard on myself and overthinking this WL?

Hi! I've never posted anywhere but don't really have anywhere else to speak to anyone about this.
Please bare with me, i'm extremely new to nutrition and weightloss.

I'm 27y.o, Female/ 5'6 and currently at 130lbs. GW is 123lbs (Already lost around 15-17lbs in the last few months, mainly through a lifestyle switch and food. I rarely work out apart from going on walks leisurely etc.)
I've been on a deficit (1,340 - 1,200) from June and my weight has been going down ever so slowly but recently i've been weighing myself more regularly and started to freak when the weight spikes up on the scale. I started to track my weight daily as opposed to a few times a week and have seen the scales rise and fall like crazy whilst still on a deficit. I usually have the same meals everyday, weighed out. And if i do go out to eat i have a variety of places where I know my calorie budget fits into.

I have a number of 'safe' foods that i allow myself to indulge in within my deficit and very rarely have massive cheat days or meals. I don't restrict myself off any food group that I don't already consume.
(I think i have an all or nothing mentality- now that I think about it)

My lowest weigh in this week was 128.75lbs on the 13th of October and today it spiked up to 130.
Nothing changed with my diet, I've been pretty good on tracking and don't think going lower than 1,200cals a day would be sustainable and enough for myself.

I also worry immensely on how to slowly crawl out of the deficit without piling the weight back on.

Has anyone else struggled with weight fluctuations and being frustrated with how often it fluctuates? I'd love to hear your experiences and tips/tricks!
