Does the body hold on to weight and then shed it later?

I’m on a kind of vlcd. I’m on between 800 to 1000 calories a day, sometimes I may sneak up to 1200 but that’s rare. I lost 5 lbs in the first 8 days and it’s been two weeks and nothing. It’s got me thinking once a few years ago I was camping and our food got ruined and I basically ate one meal a day for two weeks. I lost nothing after the two weeks, then went back to normal eating and it was like a miracle over the next 2 month I steadily lost 16 lb even though I wasn’t eating to lose.

Please no comments about how your body goes into starvation mode and my calorie intake is too low. My uncle is a bariatric surgeon and I have read enough scientific literature to know that that idea has been totally debunked. Vlcds do work, I’m just curious why I’ve not lost.
