Real world tips and tricks to prevent overeating?

I've got some disabilities that affect my ability to eat and when I was really sick a few years ago I could barely eat anything. I was literally starving and ended up skin and bone, lost a third of my body weight. When I was able to add in some more foods I went absolutely crazy and gained like 70%+ of my skin and bone body weight. I gradually started eating more normally and slowly got back to a healthy weight, not too terribly far off my goal.

I recently went though another period where I couldn't eat much. I just started being able to add more exciting foods back in and I'm having a really hard time controlling myself. I need to be able to eat these things in moderation to have a healthy and well balanced diet, but the urge to shove as much of whatever in my mouth as I can is so strong. I'm saying this as someone who quit smoking over a pack a day after 18 years. The cravings are bad. Like if food just tastes appetizing I just want to eat all of it. Inevitably, I've started gaining weight again. I read the section of the Q&A on overeating and it was helpful - just wondering has anyone here had a similar experience? If so, what are your tips and tricks for managing it?
