Ways to start and keep tracking food

Hello everyone,

For awhile now I've been trying to track my food, I seem to be so inconsistent because I find it really hard and time consuming to input hone made meals, especially since I don't make them. Obviously I can input things like cereal, breakfast sandwiches, etc.

Are there any tricks to inputting the home made meals?

I.e like spaghetti, and other casserole types where it'd made up of many ingredients.

I'm trying to get started consistently because I'm not loosening any weight.

I'm currently white male 6'1@413lbs age 50. I've been obese all my life.

Unfortunately food has always been my safety net I guess you could say. I use it for depression and other issues.

I am taking meds but with current situation I'm finding it hard to be positive all the time.

There is lots of stress in my life currently. I am reading how to manage it but if I can get a consistent way of tracking my foods then I know I can see what my calories intake and outake are.
