I want to start diversifying my meals but my pantry sucks..

Since the turn of the year I've been doing CICO with some great success. I've lost around 28lbs give or take since the stark of the year. My current intake is 1800 Sunday - Friday and Saturday I have a "free" day (Usually I just consume around 2500 so nothing mega but I indulge a little more)

So I've achieved this success through fasting & eating simple.

My eating usually starts around 11:30AM - I'll have some form of wrap with a bag of crisps / chocolate bar / yoghurt / zero cal pop. On the wrap it's pretty consistent. Sandwich meat, salad, beetroot, cheese & Sauce. Dinner is around 700-900 cals.

For my evening meal it's after I've finished work around 5PM. This'll be either some form of low cal ready meal (I always pick below 500 cals so usually a quick pasta meal, hot pot, veggie ready meal) or again some form of wrap. Usually in this wrap I'll have hot food so frozen fish / chicken into the oven. This'll usually be 800-900 cals. Then I fast from 6PM - 11:30AM drinking water and one coffee in the morning with oat milk.

Now doing this over 6 months, it's getting stale and boring. I still like the taste of the meals but I feel I can make better, more calorie dense home meals. The problem I have is my pantry sucks. Apart from a variety of spices, oils, small bit of salad (Lettuce, Cucumber, Carrot Sticks) there's nothing I can just grab and make myself a meal.

On my next shop, I'm planning to get myself some more veg (Onions/Peppers) Stuff I can get on the go easily. I have a TON of videos saved on Tiktok and they're using stuff like Philly cheese to make sauces and I'm just like whoa I want to do that.

So the question: What should I be stocking my pantry up with so I can freely cook a range of meals without resorting to wraps everyday. I'm planning on training for my 2nd ever 10k soon too so I'm hoping this meal cooking willl help me a lot.

I also want to touch into crock pot for cooking my weeks meals but I think that's another post for another day..
