A core element of my journey is learning to enjoy food in ways I would never have imagined six months ago. So I thought it'd be nice to look back on how my taste has evolved since I started losing weight. The purpose of this post is to reassure myself that yes, I am heading in the right direction.
A Quick Recap of my Day-to-Day in September
After trial and error early in the year I found out that if I overate for breakfast my digestive tract would go completely out of whack, so I would cook one serving instant noodles (440kcal and >1800mg of salt!!!) before leaving for school. Then, because school ended 1:15 pm with no lunch break, I would come back home and make a double serving of pasta/instant noodles depending on what I had on hand. If I was feeling extra that day I could go up to three or four servings.
My mother was oftentimes in too much of a hurry to cook so takeout was a common occurrence. We ate McDonald's or KFC, but occasionally ordered from the local Hong Kong-style cafe.
Plenty of snacking in between as well. I used to have a hoard of carb-based snacks in my desk drawer at home, and those provided little to no satiety so I would finish, say, entire cans of chips or multiple rolls of cookies in one stint.
Now let's look at my present diet.
Veggies, Veggies, Veggies
I now put lettuce in all the sandwiches I make. It just tastes better, provides additional texture to the sandwich and adds volume for negligible calories. On select days I take a lettuce plant and boil its leaves along with whatever I'm cooking, hoping it will fill me up.
The Holy Boiled Potato
I've done some research and the statistics show that potatoes are a great food for weight loss. One of my former go-to foods, a certain Korean brand of instant noodles, nets about the same amount of calories (502) as I would get in four small potatoes. Not to mention it's nowhere near as filling (energy density).
So what I've done is literally raid the local supermarket for potatoes. I've gone from boiling one per day to two per day to three per day. My potato stocks are draining fast and I plan to go out tomorrow for more potatoes.
When boiled for seven to ten minutes your average small size potato (130g or so) will have a varied texture. It is soft on the outside and towards the core it becomes a bit harder and chewier.
Protein, Protein, Protein
I had always heard of "chicken breast" as a top diet food, so I gave it a go. And boy do I love it. When boiled for seven to ten minutes it explodes with juices equivalent to those in any old KFC. Despite its heightened price compared to other parts of the chicken it's actually kind of driven down meal spending since one package lasts me four days of dinner.
Then there's the eggs. I usually throw eggs in my noodles/pasta by way of cracking them and pouring them unbeaten into the pot to cook for 1 minute. Now I cook eggs almost exclusively whole, and a 3 to 4 minute boil produces firm whites and a runny yolk. I would bite off a section of the top after peeling and suck out the insides.
Conclusion
Putting myself on intermittent fasting and having generally set mealtimes means that I look forward to every single meal in a way I haven't before. Eating is actually enjoyable now. No looking back.
