Stagnant weight, mild gain even with intense physical activity and starvation

I am a 19 Y/O, 154 lb, 5'8" enby (ahem male body) and I have been following CICO for the entire month of October. I have been putting myself under a 1500 calorie deficit per day throughout and did have quite a drop in weight in the beginning (about 8 pounds).

But from the second half of October, I started to eat out more than before, and I tended to take in unhealthier food options than I should. However, I made sure to count calories and maintain it under my daily caloric limit. This has become a habit though, and I've started cooking at home to remedy this.

However, as I reached 154 lb, I started to stagnate, no matter what or how much less I ate. Anything more than the caloric limit will instantly gain pounds, and starvation will only maintain it.

Moreover for the past week I've enrolled in basketball coaching, meaning I'm also burning off quite some calories (about 30-50% of my daily caloric limit). Despite that, the stagnation pattern still follows, I'm still having to starve to maintain weight.

As for muscle gain as opposed to fat, I don't notice any new muscle definition either. Could me eating unhealthier foods (even under caloric restrictions) cause this stagnation? Or is there anything else that might be making this happen?
