At a loss, CICO and gym just as I (27F) used to five years ago not working out the same. Help!

I am 5’8 and 140lbs. Age 19-21, followed a certain routine to be ready for my photoshoots. I was 125lbs. I was doing a lot of fitness modeling. I kept a detailed diary of food intake and my gym abilities and routines. I used an online calculator and my BMR is roughly 1600. I add around 400 calories of exercise daily.

I since had two babies. The youngest is now 2 and I started up my routine again. To give an idea, Monday would be something like: Breakfast: berries with protein yoghurt Lunch: mixed frozen vegetables with quinoa and tuna Dinner: one oven potato with chicken pieces and vegetables on the side Workout around 2pm-3pm lifting heavy weights (for my size) then swim or use a spin bike

I track meticulously. 1500 calories a day and 6 gym days a week with the same routine as before. For two weeks I was on holiday not on a deficit and not working out consistently. Every Sunday I eat dinner out and those days I skip lunch. The Dinner is Never more than 1000 cal because I don’t drink wine or soft drinks.

It’s been 3 months and I cannot get below 140. Is my body so different now? I feel like CICO is everything to me, the only equation that actually does anything. So why is my weight stuck?
