need help :/ | keto beginner, no results

hi folks, hope y'all doing good!

i started keto almost a month ago: i think i got into ketosis around the third day since i had a metallic taste in my mouth, nasty breath and sweat and urine along with a general fatigue feeling. i weighted myself a week later and i went from 79kg (174lbs, around 30.4% body fat) to 80. weird. i stepped on the scale the next day: 80.5kg and again the following day: 81; after two weeks on keto i was 81.4kg as well as the days after. i thought i was retraining water or that my body was just adjusting for the drastic new changes. i decided to step on the scale today (after wee and poo and 12h fasting) and i read 79.9kg. i took body measurements and nothing changed. what the hell is going on?

SOME DATA: M21, 1.63cm (5'4'' sigh), coming after months 0 fitness, plant based, high carb and like 10g protein per day diet (haven't been eating much tho).

i've struggled with my weight for all my life and it has always been the same despite the bunch of diets (the maximum weight i lost was 6kg with IF and one month of vegan keto soon gained back) —i don't have food intolerances, got my thyroid checked and it was normal as well as my bloodwork that i check regularly. i'm not stressed out, i'm not overeating and i accurately track every single (kitchen scale weighed) gr of everything on MFP.

EXERCISE: i walk for h1-1:40 every morning on empty stomach. from the second week i added 3-4 sessions (1h each) a week of weight lifting and 2-3 times a week a 30' total body youtube workout. i noticed i have now more energy (even if not everyday) and strength. the rest of the day i'm a total couch-shaped arse lol.

WATER INTAKE: 3-3.5l.

KCAL INTAKE: along with sailrabbit.com results my average BRM is 1,688kcal.
1,200kcal [80g pro, 8-18g net carbs, 90g fat]. —i meal plan religiously so i always hit the macros.

WHAT I EAT IN A WEEK: 10-13 eggs, chicken, 1-2 times beef or bacon, würstels (yeah not the healthiest choice but i'm broke lol), frozen coldfish/canned tuna (not really into fish), full fat plain yogurt (sometimes), 700g/1kg veggies (mushrooms, broccoli, spinach, zucchini), salted peanuts, cheese (parmesan/caciotta/mozzarella/scamorza/maasdam), mayo, evo oil. that's it, everything homemade, no keto substitutes, no cheat meals, no alcohol. i do 16:8 IF everyday (2MAD at 8am and 4pm).

ELECTROLYTES: i salt all my meals, sip a bouillon cube broth throughout the day (with food i get at least 5000mg), 300mg magnesium supplement, 860mg potassium citrate supplement + B multivitamin, D3 and equisetum.

should i keep going like this? as i said i'm not losing anything, i haven't experienced any “woosh” nor “mind clarity”like people say; on the other side i don't have face pimples anymore and my nails and hair got more resistant. unfortunately on the second week i felt i was starving to death and my only wish was to binge on carbs (in fact i got an average of 1700kcal daily because i ate much more than i should had without even feeling full, even tho i'm glad for not ended up in a pizzeria as i craved but ate meat, parmesan and peanuts). i can't stop thinking about food even if i have a bunch of reasons why i want to be in better shape. i'm not talking about junk food (my last meal in a fast food was when i was like 10 lol) but basic things like a sandwich, pasta, beans, more nuts than 20g of carbs, a sporadic breakfast in a cafè with a croissant. i genuinely enjoy what i eat but i feel deprived and i see no results (yes, i perfectly know keto is not a miracle pill) and i'm honestly thinking about go low carb instead. do i just need more time? do i need to change something?
