How to move away from chips as a side?

I'm definitely a savory person over a sweet person and recognize that the side of chips I tend to eat with lunch can be an easy swap for something healthier (and that also helps fill me up). However, just automatically switching to baby carrots sounds terrible when there's some sour cream and onion chips in the pantry.

Any recommendations to slowly switch this over to something more healthier? Looking for a process similar to how I introduced roasted veggies to my husband - first by loading them with cheese and then slowly pulling back that now having a little cheese on top is a fun surprise haha
