Why do I need to cut carbs to lose weight?

Me: male, 30s, about 5"6', life history of being overweight.

Peaked at about 208lbs or 94kg about 10 years ago, which for my height was dangerously obese.

It was not until around 2012 that I switched to a high protein diet, counting macros, but for many meals eating only low-fat high-protein meals. High protein and no fat is very much a starvation diet I would say, but over a few years, I lost over 65lbs dropping to only 143lbs.

I was actually skinny and had to buy a whole new sets of clothes over those years.

But I have very slowly put on weight, I believe due to carbs and sugar, and this would seem to be the issue. This accelerated during Covid and lockdown. Recently bringing myself down from 190lbs to 180lbs.

I have been sticking to less than 50 grams of carbs a day recently, which I think would be more like a keto diet. But I have definitely experienced symptoms of hypoglycaemia, and much worse than I expected. I haven't felt hungry so much this time I think due to having more fat and fattier foods and proteins.

I never drink sugary soda, and as much as I love bread, rice, cakes and chocolate treats, my problem seriously seems to be carbs.

I feel like I am running a science experience trying not to trigger an insulin response, I am wondering if there is any sort of test I can take to better understand my body or dietary requirements, other than a perception that I can only lose weight when I drastically reduce carb intake?
